Potato size tubers

Hi all, I don't really post here because I container grow my Water Lilies and have no pond, but I was wondering if someone could help me with a question. When we were in Europe I grew Tropical Water Lilies and normally over wintered and propagated by taking the plants aprt and just saving the small nut size tubers from which I would get three or four new plants per tuber. Now we are in the US and have a small collection of Tropicals I'm trying to do the same thing , the only trouble is that each plant just has one huge tuber and the terminal point is where the main plant is growing. So will this tuber be good for propagation ? Should I remove all the main growth down to the tuber opening level and hope that small plants will start to develope ?
