What do you do with leftover ham besides sandwiches?
« on: May 05, 2009, 12:16:04 PM »
I have at least half of a lovely spiral ham leftover and don't know what to do with it. Have already had sandwiches and omelets and just eaten it with potatoes and a veggie and fruit twice.

Any ideas?

Ham and Onion Casserole

Put in casserole:
                     3 lg onions, sliced thin
Lay over the onions:
                      1 slice ham (1 inch thick, about 1 & 1/2 lbs)
Pour over the ham:
1 can undiluted cream of celery soup or 1 & 1/2 cups canned tomatoes
Bake 1 hour at 350*. Serves 4

Good variations: add herbs, chopped parsley or mushrooms to this basic dish. Or make it w/ leftover bits of ham.

Chop into 1 inch cubes, and freeze in small baggies. Use for soups, chowders, beans... for the rest of the year. :)

Ham vegetable soup!  I like it better than beef.

Thanks for the ideas.

Can I have the ham and scalloped potatoes recipe? Is the asparagus on the side or in the casserole?

I wish Bob liked quiche. I love it.

with scrambled eggs and a topping of 2 parts mayo to 1 part parmesean cheese and 1 part sour cream.  Add to eggs/ham when almost done cooking enough to warm it up.

I will start this sometimes with grated zucchini (with moisture squeezed out) sauteed in butter and then add eggs and ham..then topping.

A pot of any type of bean cooked with a ham bone is great. My choice is either pintos or black-eye peas. Of course, that is best served with hot, fresh from the oven, Southern corn bread and green onions. o(:-)
Happy ponding,
